One-Pot Pasta Primavera recipe

This vibrant dish is a celebration of fresh, seasonal vegetables and the convenience of one-pot cooking. In just 25 minutes, you can have a hearty and flavorful meal on the table, leaving you with more time to savor the moments that truly matte

Ingredients

  • 8 ounces (225g) pasta (such as penne or spaghetti)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 medium zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups vegetable broth
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving
  • Fresh basil leaves, chopped, for garnish

Instructions 

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add minced garlic and sliced onion, and sauté for 2-3 minutes until softened and fragrant.
  • Add sliced bell pepper and zucchini to the pot, and cook for another 2-3 minutes until slightly tender.
  • Stir in halved cherry tomatoes and cook for an additional 1-2 minutes until they begin to soften.
  • Add the uncooked pasta to the pot, along with the vegetable broth. Season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce the heat to medium-low and simmer, uncovered, for about 10-12 minutes, stirring occasionally, until the pasta is cooked to al dente and most of the liquid has been absorbed.
  • Once the pasta is cooked, remove the pot from the heat. If the pasta appears too dry, you can add a splash of additional broth or water.
  • Serve the One-Pot Pasta Primavera hot, garnished with grated Parmesan cheese and chopped fresh basil leaves.

Notes

Feel free to customize this recipe by adding other vegetables such as mushrooms, spinach, or asparagus, according to your preference.
