Classic New York Cheesecake Recipe

Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 11/4 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

Instructions 

  • Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan, creating an even layer. Chill in the refrigerator while you prepare the filling.
  • Prepare the Filling: In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully incorporated.
  • Bake the Cheesecake: Pour the filling over the chilled crust in the springform pan. Smooth the top with a spatula. Bake in a preheated oven at 325°F (160°C) for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  • Cool and Chill: Turn off the oven and leave the cheesecake inside with the door closed for 1 hour. Remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan. Allow it to cool completely at room temperature, then chill in the refrigerator for at least 4 hours or overnight before serving.
