Easy Egg Fried Rice Recipe

Ingredients

  • 3 cups cooked rice (preferably day-old, chilled)
  • 3 tbsp vegetable oil
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (such as peas, carrots, and bell peppers), diced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Green onions, thinly sliced, for garnish

Instructions 

Prep the Ingredients:

  • If using freshly cooked rice, spread it out on a baking sheet and let it cool completely. Chilled rice works best for fried rice as it maintains its texture and doesn't become mushy.
  • Lightly beat the eggs in a bowl and set aside.

Cooking:

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  • Add the beaten eggs to the skillet and scramble them until just set. Remove the scrambled eggs from the skillet and set aside.

Stir-Fry Vegetables:

  • In the same skillet, heat the remaining 2 tablespoons of vegetable oil over medium-high heat.
  • Add the minced garlic and stir-fry for about 30 seconds, or until fragrant.
  • Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes, or until they are tender-crisp.

Combine Rice and Eggs:

  • Add the chilled cooked rice to the skillet with the vegetables. Use a spatula to break up any clumps of rice.
  • Pour the soy sauce, oyster sauce (if using), and sesame oil over the rice. Stir well to combine, ensuring that the rice is evenly coated with the sauces.

Add Eggs and Season:

  • Return the scrambled eggs to the skillet with the rice and vegetables. Stir-fry everything together for another 2-3 minutes, or until heated through.
  • Season the egg fried rice with salt and pepper to taste. Adjust the seasoning if needed.

Serve:

  • Transfer the egg fried rice to serving plates or bowls.
  • Garnish with thinly sliced green onions for a pop of color and extra flavor.
  • Serve hot as a delicious and satisfying main dish or as a side to your favorite Asian-inspired meal.

Notes

  • Feel free to customize this egg fried rice recipe by adding other ingredients such as diced cooked chicken, shrimp, or tofu.
  • You can also add additional flavorings such as grated ginger, chili flakes, or a dash of rice vinegar for extra complexity.
  • Leftover egg fried rice can be stored in an airtight container in the refrigerator for up to 3 days. Reheat it in the microwave or on the stovetop until heated through before serving.
